Stuffed Strawberries

I am a BIG fan of pinterest. How else would I have learned how to stick a sock in my hair to make the best bun ever!

That’s halfway through my spring barrel wine tasting J I was having a great day with some girlfriends.

Stuffed strawberries have been all over pinterest lately. Mother’s Day seemed to be the perfect excuse for me to make my own version of this sweet summer treat.

 

Stuffed Strawberries

1 8oz block of 1/3 fat cream cheese

¼ cup powder sugar

1 tsp vanilla

1 tbs lemon zest

1 small container light cool whip refrigerated

2 lbs strawberries hulled

 

Whip up the cream cheese until it is nice and fluffy. Then add in your powdered sugar, vanilla and lemon zest, mix with the beater until it becomes a dense frosting consistency.

 

Take half of the container of cool whip and mix in well with a hand spatula. The goal is to loosen up the cream cheese mixture. When well combined add in the second half of the cool whip and lightly fold in. Transfer the mixture into a gallon sized ziplock bag and let rest in the refrigerator for about a half in hour.

 

Wash the strawberries and hull them, then arrange in an upright position on a tray. I used a glass pie plate with some napkins underneath.

 

To fill strawberries cut a small opening in a bottom corner of the bag to create a pastry bag. Twist the open top to seal out excess air, then squeeze out the cheese mixture into the strawberries. When I was done filling the strawberries I may or may not have been taking shots of the cheese mixture out of the bag. . . I have no shame.

 

I topped the strawberries with crumbled gram cracker crust. It was mostly for you guys and a prettier picture, I found it unnecessary to the actual taste of the dessert.

 

These babies where a big hit for the family and were gone by the end of the day, though with my family anything with cream cheese in it will be a hit.

 

Is there a certain food that everyone in your family loves? I was serious with the cream cheese, if anything involves cream cheese my family will demolish it.

Solo Sesh

I know it’s been a while but I refuse to apologize. I am just starting this and realize that I will lose the two followers I have if I can’t keep a regular posting. My “visit” home was more of a vacation with two of my friends that I hadn’t seen in a year. We had a blast. I am not going to recap my whole time there because as it turns out I’m not into recaps. I know a lot of other blogs do it but I find them to be overwhelming. This blog showcases snapshots of my life not my whole life. I don’t want to apologize for life. I will try to post more regularly and am even coming up with a format of what subjects I will post on. I know so exciting.

 

I love being outside. I am terrified of being outside alone. Hiking, snowboarding, mt. biking are all things I prefer to do with other people around me. Not only does it make the time more enjoyable, I look silly when I am just talking to myself, but it adds an extra set of hands to help pick me up for when I break something or get eaten by a bear.

Today I worked on my fear. I took my bike and headed out to Cowiche Conservancy. I rode mostly the top canyon trails but will defiantly venture down next time. I loved it.

It was sunny without being hot and I had the whole cannon to myself. Now all I have to do if figure out what to do with the rattle snakes up here. I can deal with bears but have no idea what to do with rattle snakes.

Catch up

This is the first time since I came home that I have had more than an hour to sit down and work (i.e. look for work). It has been chores, run out to see friends, chores, ect. I have loved every minute. I had to say no to a facial this morning so I could wait for the repair man, and actually get some work done. I thought I would write a short post recapping some of the last couple of days.

I was so excited to come home on Thursday and be greeted by this:

All of the trees and wildflowers are in full on bloom. It makes me so giddy every year.

I also got greeted by this face:

Her face also makes me giddy.

 

Friday and Saturday morning I became a spider serial killer, no cobweb left behind. Our canning room got cleared out and scrubbed down, then I sprayed spider killer ALL over the place. I still have to put everything back in the canning roomL

Saturday night was Cinco and I got to see JB!

We like to get really goofy and Cinco gives us a good excuse to do that.

Sunday was strictly for recovery and hanging out.

Monday I had an interview at a temp agency and somehow ended up signing up for their agency, and took a surprise pee test. No worries, I live a healthy, clean lifestyle; but I wasn’t impressed by the fact that I had to take the test before I interviewed for any actual jobs.

After the interview I headed up to my friend’s house and we went on a mission to find me a bridesmaid dress for her wedding. It was horrible. I will probably make comments about pear shapes from time to time, I am very happy with my body because it does amazing things; it does not do A line or empire waist though. House was a kind description of me in a couple of those dresses. We did end up finding one at six thirty that night.

The highlight of Monday had to be getting Trader Joe lunches, heading to Manito Park and picnicking for a lunch break.

Yesterday was a whirlwind of errands, meeting friends for lunch, going to another friend’s house to get my hair done, then mountain bike riding with yet another friend. (I missed all my friends!) I didn’t get home until nine pm last night.

This morning I made myself a “light” French toast with almond butter smear and sugar free syrup. I’m going to be spending the morning catching up on emails and cleaning the hot tub. Oh chores.

Breakfast Mousse

 

Right now I’m driving over three hours for an interview. I’m excited for the chance for this job but not so excited to move, and start all over in another small town. I hope I get the job because a good job is always worth the move. With me driving all day I thought I would do a pre-post and share my latest breakfast concoction. It is like eating dessert for breakfast. I usually go to the gym really early in the morning and don’t eat breakfast until I get back home.

 

Breakfast Mousse

Serves one

1 cup plain nonfat greek yogurt

1 cup frozen berries

1 scoop vanilla protein powder

1 tbs white chocolate sugar free instant pudding

Defrost berries in microwave. There needs to be a good amount of juice to help absorb all the powder.

Combine the yogurt, and powders in the bowl and mix together.

Make sure and let the mixed concoction rest in the fridge for five minutes. This is usually when I hit the shower. When I’m ready to eat I have this wonderful mousse like concoction with chucks for juicy berries.

Butterscotch Oatmeal Cookies

It’s a two for the price of one day! I am sorry I didn’t post yesterday, I thought I would make up for it by posting twice today. What better way to say your sorry then making butterscotch oatmeal cookies. These are making my house smells so good right now. I was planning on lighting some candles later on today, but I can’t now, that would just ruin the smell of orange infused butterscotch oatmeal cookies.

I want to post a dessert reciepe a week but this week I had dessert block, no matter how much I pintrested goodies I couldn’t think of any ones to make. Then suddenly while suffering through the elliptical this morning these babies came to me.

Butterscotch Oatmeal cookies

Makes two dozen

½ cup room temp butter

1/3 cup granulated sugar

1/3 cup packed brown sugar

1 egg

1 tsp vanilla

½ tsp cinnamon

Gradated peal of one orange

Juice of half an orange

¾ cup of all purpose flour

1 ½ cup oats, not quick cook

½ tsp baking soda

½ tsp salt

2/3 cup butterscotch morsels

Beat the butter untill it’s nice and light, then add in both of the sugars.

Cream together the sugars and butters untill it looks like the sugars are mostly dissolved into the butter mixture. Then add the vanilla, orange peel, cinnamon, orange juice and egg.

Beat until well incorporated, your looking for a unified consistency. In a separate bowl mix together all of the dry ingredients minus the morsels. Add half of the dry mixure into to the wet mixture bowl.

Mix until incorporated, then add the other half of the dry ingredients, when all of the ingredients are incorporated mix in the butterscotch morsels. Portion them out onto a cookie sheet and put them in an oven preheated to 375 degrees for 12 minutes. You smell them before they are done. I really need to cook with peels more often, my house smells amazing.

Let the cookies cool on the pan for a couple minutes then transfer them to a cooling rack till they are room temp. Feel free to snag the broken cookies and taste test;)

I’m off to deliver these bad babies to JB’s work so that the boys can get a treat.

Mason Jar Smoothie

I am a huge smoothie fan and was making it a goal to consume more of them to help get more nutrients in my diet. It was a great coincidence when the Fitnessista set out the challenge smoothie a day for May. This morning it was my breakfast but it also works as a great quick lunch when your jetting out the door.

Amanda’s Mason Jar Smoothie

Serves 1

½ cup fat free milk

1 ½ cup baby kale

½ frozen banana

½ cup frozen berry mix

1 tbs chia seed

I only have a bullet blender to make smoothies in, which makes adding greens to my smoothies a little difficult. A trick I have learned is to add the milk and greens in first and blend them until the greens “liquefy”.

After you “liquefy” your greens add the rest of your smoothie mixins and blend away. I had completely forgotten how good bananas where in smoothies. I had found a banana in the back of my freezer and was like “why not?” So glad I did.

Today I am using the mason jar as an easy handling device to accomplish my very long to do list today. This includes but is not limited to packing for my trip back home, getting ready for an interview, baking cookies (will post that soon) and clean some bathrooms.

I love going back home to visit my family, I’ll be there for over a week this time and can’t wait to hang out and help out. I just HATE to leave any mess in my house before I leave for trips. This makes leaving my house a stressful tornado of cleaning and packing all at once.

Are any of you on the Mason Jar trend? I have bought two antique blue ones in the last couple months to add as décor and have started using the above clear one as a fun alternative to glasses. To be truthful I am on the fence with the whole Shabby Chic décor trend.
